The fruit for the 2005 A by Acacia Pinot Noir was harvested at night and in the early morning to guard the aroma and flavors of the grapes. The grapes were received at the winery and were crushed and de-stemmed prior to fermentation. A combination of oak barrel toasting levels was used to create the classic Acacia style.
This wine displays both red and black fruit aromas (cherries and raspberries), on the nose and the palate. In addition, one finds a light touch of brown spices (nutmeg, cinnamon, allspice) and even a little black pepper. True to our house style, it is elegantly textured with satiny, polished tannins showing in the finish.
This garnet colored wine reveals aromas of crushed violets, vanilla and baking spices. Flavors include rich black cherry, ripe blackberry and hints of black pepper. The finish is long, velvety and voluptuous.
In contrast to the more delicate 2004, the 2005 is built on larger shoulders, with a strong backbone that will certainly reward with extended aging. Pinot Noir's more delicate heart beats beneath, but for now the 2005 is true to the vintage. Of course, one can happily enjoy the wine now with its expressive nose of lilac and violet blossoms, and a wild array of red and black fruits, white pepper, clove and orange peel. The body is rich and the finish long and silky, suggesting a minimum aging of 7 to 10 years.
Aromas of cola, cranberry and graham crackers supported by subtle notes of nutmeg. Beautifully structured and lush, the mouth is loaded with complex layers of cherries, brown spices and hints of roasted meats that surround silky tannins that persist throughout a long finish.
